Vegetables contain a high amount of water, fiber, vitamins and minerals. Fiber comes in two types: soluble and insoluble. Brussels sprouts are very high in insoluble fiber. The fact is that both types of fiber are good for you. Insoluble like that in cauliflower or broccoli, is very good for digestion as it cleanses the system and aids in digestion while keeping you regular.
However, soluble fiber (the kind in Brussels sprouts) is excellent from the standpoint of expunging excessive cholesterol and fats. It dissolves in water and creates a gel like substance that then binds to fats and cholesterol.
Brussels sprouts have one of the highest amounts of soluble fiber of all vegetables. A 1/2-cup serving contains over 2 grams. Turnips, sweet potatoes and asparagus all have 1.7 grams or more, but they also have starch and sugars that are less than ideal for burning fat. Brussels sprouts, are not only high in soluble fiber, they also contain insoluble fiber and are low in starch and sugars. This combination makes it ideal for burning fat and weight loss. They are also high in Vitamin C, contain potassium, Vitamin B and other essential minerals.
Brussels sprouts belong to the cruciferous family of vegetables, which contain substances called glucosinolates. Researchers at the Linus Pauling Institute have shown that Brussels sprouts can lower the risk of colorectal and lung cancer.
